Aroma und Geschmack

Rosmarin vereint ein riesiges Spektrum an einzelnen Aromenkomponenten und ist dadurch der geschmackliche Allrounder im Kücheneinsatz. Wenn du unsere Dose öffnest, wird dir der kleinste Pinienwald der Welt wie wild entgegenduften. Rosmarin Aromen setzen sich aus dem leicht süßlich, balsamisch riechenden Myrcen, dem frisch-fruchtigen Linalool und dem an Rosenduft erinnernden Geraniol zusammen. Dazu gesellen sich galant zitronenartige Geschmäcker, die die Frische markant untermauern. Es finden sich allerdings auch holzige Noten. Schmecke und rieche mit geschlossenen Augen Rosmarin, mit ein bisschen Übung werden sich einige der Komponenten wiederkennen lassen. Der als Rosmarinextrakt bekannt gewordenen Stoff Rosmanol ist beinahe geruch- und geschmacklos, zeichnet sich allerdings durch eine durchschlagende antioxidative Wirkung aus.

So verwendest du unseren vielseitigen Rosmarin in deiner Küche

Falls du frischen Rosmarin verwenden willst, nutzt du dafür die ganzen Zweige, das heißt die frischen Blätter, die ein wenig an Nadeln erinnern. Sie lassen sich im Kühlschrank ohne weiteres einige Tage aufbewahren. Getrocknete Blätter solltest du immer in einem luftdicht verschlossenen Gefäß - geschützt vor Sonnenstrahlen - aufbewahren, wo sie 12 Monate geschmacksintensiv bleiben. Beim Mitgaren müsst ihr nicht sehr zimperlich sein, sowohl frischer als auch getrockneter Rosmarin lassen sich perfekt mitgaren und büßen nur wenig an Aroma ein. Vorm Servieren die ganzen Zweige entfernen - unsere getrocknete, fein gehackte Variante wird mitverzehrt. Dabei gilt es beim Würzen, wie so oft bei Kräutern, zu beachten, dass getrockneter Rosmarin deutlich intensiver und kräftiger schmeckt. 

Wozu passt Rosmarin?

Wie schon angedeutet gehört Rosmarin zu der Sorte Küchengewürz, die unendlich viele Variationsmöglichkeiten bietet. Ob zu Gemüse, das gekocht, gegrillt, oder geschmort werden kann, wie etwa Auberginen, Zucchini, Kürbis, Kohl oder auch Hülsenfrüchten - Rosmarin unterstützt die Eigenaromen auf galante Weise. Wer nach Abwechslung zu Basilikum in Kombination mit Tomaten sucht, der sollte es mit Rosmarin probieren. Schon einmal an eine Tomatensuppe oder -sauce mit Rosmarin gedacht? Als kleine Guideline könnte man - zugegeben etwas gewagt - sagen, dass Rosmarin zumindest zu allem passt, was man in Olivenöl braten kann. Das haben wir uns nicht aus den Fingern gesogen, sondern der Grund ist die Austariertheit von sich hebenden Bitternoten, die perfekt mit dem Balsamischen des Olivenöls zusammengehen. Über seine kräftigen, fast an Weihrauch erinnernden Komponenten passt er überdies erstaunlich gut zu Zitrusfrüchten. Mit Fleisch gelingen dir auch viele herrliche Gerichte, so passt Rosmarin etwa hervorragend zu aromatischem Lamm, leichtem Kalb oder Geflügel oder geschmortem Kaninchen.

Mit welchen Gewürzen harmoniert Rosmarin?

Aufgrund seiner mediterranen Herkunft und Nutzung überrascht es kaum, dass Rosmarin toll mit anderen Kräutern aus dem Mittelmeerraum harmoniert. Zu nennen wären hier unbedingt die ganz großen Nummern der mediterranen Küche, nämlich Majoran, Oregano, Salbei oder etwa Lavendel. Genauso wenig verwunderlich, dass Mischungen wie ‚Kräuter der Provence‘ gerade in diese Kerbe der Gewürzharmonie schlagen. Das passt auch deswegen so gut zusammen, weil keines der Kräuter zu schwach wäre, sich gegenüber dem dominanten Geschmack von Rosmarin zu behaupten. Aber auch Geschmacksverwandschaften mit Bohnenkraut, Knoblauch und Minze treten auf. Ein Gewürz mit vielen Freunden, unser Rosmarin. Welche Kombi du nun wählst, du hast die Qual der Wahl.

Was gehört zu Kräutern der Provence?

‚Herbes de Provence‘ ist nicht mehr nur im Mittelmeerraum ein Begriff, sondern erfreut sich auch in unseren Breiten hoher Beliebtheit. Die aus Südfrankreich stammende Komposition enthält die dort typisch vorkommenden Kräuter, nämlich Rosmarin, Thymian, Bohnenkraut, Oregano und Lavendel. Einige Rezepte der Zubereitung sehen noch Lorbeerblätter oder Fenchel vor, das ist aber kein Muss und bleibt dem persönlichen Geschmack überlassen. Insbesondere in warmen, sonnigen Sommern, in denen die Kost möglichst leicht gegessen wird, haben sich die kräftigen Aromen der Kräutermischung verdient gemacht. Es bietet sich an, die Kräuter in einem kleinen Säckchen, etwa aus Stoff, einzuschlagen, wenn man sie mitkochen will. Bei Schmorgerichten die Kräuter lange kochen und erst am Ende wieder heraus nehmen; das intensiviert die Aromen. 

Schmeckt ein Tee aus getrockneten Rosmarinblättern? 

Wer nach einer durchfeierten Nacht am Morgen etwas heiser ist oder wer es sich am Wochenende nur bequem machen will, ist gut beraten, den Tag mit einem Aufguss Rosmarintee zu beginnen. Für eine größere Tasse genügt ein Teelöffel Rosmarin, den man je nach Gusto 5-10 Minuten ziehen lässt. Verfeinern kannst du den Tee dann noch mit Zitrone oder Honig und der Tag wird dein Freund werden. 

Geschichte und Herkunft:

Die eigenwillige Blattform ist den für Pflanzen schwierigen klimatischen Bedingungen der Herkunft geschuldet. Im heißen Mittelmeerklima können sich Pflanzen keine ausladend großen Blätter erlauben, denn einerseits bieten sie natürlich Fläche für Photosynthese, andererseits aber auch Fläche für Verdunstung von in der Pflanze befindlichem Wasser, das so schnell knapp werden könnte. Oft wird das deutsche Wort Rosmarin etymologisch in Verbindung mit dem Wort ‚Marienrose‘ gebracht, ein Zusammenhang, der sich nicht halten lässt. Der eigentliche Name stammt aus dem Griechischen und hat mit Maria nichts gemein. Er bedeutet schlicht ‚duftender Busch‘, der den Völkern im Mittelalter schon gut bekannt war. Das wohlig duftende Rosmarin, das man aus der Pflanze gewann, zog die Aufmerksamkeit der Menschen auf die Besonderheit der Pflanze. Das blieb etwa auch der ungarischen Königin Isabella nicht verborgen, die versuchte sich mit Rosmarin zu verjüngen. Der Legende nach habe der kräuter-kosmetische Eingriff auch geklappt, die damals 72 Jahre alte Herrscherin bekam flugs darauf Aufwartungen vom jüngeren polnischen König, der gar um ihre Hand anhielt. Erst von Zeit zu Zeit wurde Rosmarin auch als Würzpflanze eingesetzt und zwar dort, wo sie autochthon vorkam, also in den Mittelmeerländern. Jedoch liebäugelten nicht alle Völker mit Rosmarin - am beliebtesten sollte er in Italien werden. Schön also, dass der Rosmarin endlich seinen Weg in die Küchen Deutschlands gefunden hat, auch wenn es ein wenig gedauert hat und wir heute wohl kaum noch an die verjüngende Kraft des Krauts glauben wollen.     

Tipp:

Rosmarin eignet sich ideal zum Herstellen von Kräuterölen. Einfach ein paar Zweige mit etwas Knoblauch und Chili in eine Flasche Olivenöl geben und für ein paar Tage ziehen lassen. Der feine Geschmack entfaltet sich und verfeinert sowohl Salatdressings als auch Fleisch und Grillgerichte.

A Sturdy Spice Rack With Some Perks and Some Limitations
We really needed a new spice rack that holds a variety of bottle sizes, and this one is made for a pretty brand-specific bottle style. It does hold some of the older model metal containers, so it looks like we will be adapting to the newer sizes and shapes. This organizer is easy to assemble and fits the space I designed perfectly. The bottom shelf is very sturdy, and the top shelf is not quite as solid, and I'm not sure exactly why. One thing is for sure: when you fill this spice rack to capacity, you will have all the spices necessary for a well-stocked kitchen. We have not filled it up, but my guess is that we can fit between 35 and 40 individual spice bottles and cans. Overall, it is at the higher end of value for the money, but it may serve us perfectly through the years and prove itself to be an excellent value and keep all of our spices well organized.

Very nice pull-out spice rack for square bottles. Mount with screws for permanence.
This Boivshi spice rack organizer is made with stainless steel, and has racks deep enough to keep your spice jars securely in place. There’s a thin plastic sheet for the bottom of each rack. Due to the shape of the racks, I recommend using square spice jars rather than round ones. My 6 ounce square jars fit well, and each rack holds 5 jars. Or you can use the smaller 4 ounce square spice jars and fit 6 jars in each rack. The 4 ounce jars will be looser and slide around more when you pull each rack out. I also recommend getting some round ingredient labels for your jar lids so you can identify contents quickly without having to lift each jar to look at the label. The stainless steel metal is thick, smooth and well attached, with nicely rounded corners. The top row is height adjustable. Each rack has its own extension mechanism. That means when you pull out a rack, it doesn’t pull out the entire row. This is especially important if you’ve used the adhesive to attach the rack to your pantry shelf or inside a cabinet as a top heavy item will pull and loosen the adhesive over time. The rack comes with mounting adhesive and wood mounting screws and its own screwdriver, another bonus for ease of installation. You can choose to mount the rack with the adhesive or the screws. My personal preference here is to attach this rack with the provided screws rather than the adhesive. With glass jars and weight that’s being pulled out over a tile floor in a pantry or over a hard countertop, having the risk of adhesive giving way is inviting disaster. So consider all the options when deciding on how to attach it. Overall, this Boivshi Spice Rack Organizer is very well made, and is a good deal at this price point. I definitely recommend it.

Expensive, but Smooth, Sturdy Spice Rack
I received the BOIVSHI Spice Rack Organizer through the Vine program, and overall I’m quite pleased with its quality. The rack feels sturdy and well-made. The metal construction has a solid, heavy-duty feel, and the chrome finish gives it a clean, modern look that works well in most kitchens. The pull-out mechanism is smooth and glides nicely. The 2-tier design is efficient and makes good use of vertical space. Installation was fairly easy and the instructions are simple enough to follow. For me, it is limited to smaller spice bottles, due to the configuration of my cabinet which limits the available height of the top tier. Also, the rack has to be secured to the surface, either with screws or adhesive mount, to prevent it from sliding around. Overall, it is well made and a practical solution for organizing spices. If your cabinet dimensions are compatible and you mostly use standard-size spice jars, it’s a solid upgrade that makes everyday cooking more convenient. However, this is a very expensive spice rack, if you compare it to similar items.

Good size, looks nice, mostly easy to put together and install
Okay I love this a lot more than I expected to. I was not extremely excited about the instructions. They come with a warning that if you have any doubts about your ability to install this, call a qualified technician. It just seemed condescending. Also, everything is printed poorly, like someone put this together in the 80's and it printed smudgingly and this is the copies from that. The only thing that this made confusing was when trying to figure out where the cabinet screws go (before I realized that was an alternative install), you really can't tell which holes they go in. Turns out they probably go in the holes covered by the pre-installed sticky PVC mat. Only other issue I had was that it comes with a screwdriver. It seems so wasteful to include something that should be in every household, especially those who buy diy things like this. But beyond that, everything else is great. It was easy to put together, it was easy to place in the cupboard, and it was easy to fill. I love that each line comes out individually. It's nice and sturdy. I tried pulling on it to test it, and the sticky was strong. I mostly loved that, even though this took up 3/4 of the shelf, I was able to fit all my small spices AND my honey AND my sprinkles. I went from 3 overflowing shelves to 2 full shelves and an almost empty one. I only have 6 items on the top. I feel super happy about this.
